Saitoh is a 8-seat sushi counter located in the heart of Roppongi, Tokyo. Since 1995, Master Hiroaki Saitoh has dedicated his life to the pursuit of pure essence in Edomae sushi.
Each piece is a meditation on simplicity — the finest seasonal fish, perfectly aged rice, and three decades of refined technique. Nothing more, nothing less.
Born in Tokyo in 1962, Master Saitoh apprenticed under the legendary Jiro Ono at Sukiyabashi Jiro for twelve years before opening Saitoh in 1995.
His philosophy centers on a singular pursuit — the perfect harmony between fish and rice. Through three decades of relentless refinement, he has earned the highest distinction of three Michelin stars for fifteen consecutive years.
Master Saitoh works alone behind the counter, training only one apprentice at a time. Each evening, he serves no more than sixteen guests.
We believe in subtraction, not addition. The finest sushi reveals the pure essence of its ingredients without ornamentation or pretense.
Each ingredient is honored with the time it deserves. Rice ages 30 days. Tuna matures 12 days. Mastery requires decades. We refuse to rush.
To serve sushi is to honor the guest, the fisherman, the farmer, and the sea. Every piece is an offering of gratitude.
